Tofu Benefits
SOY SISTERS' GLAZED TOFU:
1 lb. Firm tofu
2 large garlic cloves, chopped
¼ cup of soy sauce
¼ cup orange juice
2 T roasted peanut oil
¼ cup maple syrup
¼ cup chopped cilantro
3 T peanut oil for cooking
Drain the tofu, cut it into shapes and sizes you like, set on a paper towel and blot it well. While the tofu is draining, combine the next five ingredients in a small bowl. Heat a large non-stick pan or electric skillet to 350 degrees and coat with the oil. When the oil is hot, add the tofu and cook without moving it until it is crisp and golden, about 5 minutes or until the tofu releases from the pan easily. Turn and cook on the other side, adding more oil if necessary. Pour in the marinade and stir to coat the tofu. Reduce the heat to medium and cook until the sauce is thickened and the tofu is glazed. Don't let it cook so long that it gets sticky. Add the cilantro just before removing tofu from the skillet. SOY SISTERS' TOFU HUMMUS:
½ lb. soft tofu
15 oz. can of garbanzo beans
5 T fresh lemon juice
1 tsp cumin
2 tsps. minced garlic
1 tsp. paprika
3 T olive oil
Blend the tofu in a food processor for one minute. Add beans, lemon juice, spices and oil to tofu mixture in the food processor, blending between each addition until mixture is smooth. Serve with warm pita bread or crackers. SOY SISTERS' TOFU APPETIZER
1 lb. soft or firm tofu
1 tsp. minced ginger
4 T soy sauce
4 green onions
Place tofu on plate. Mix 1 teaspoon ginger with 2 tablespoons soy sauce. Spread ginger-soy sauce mixture over top of tofu. Finely chop green tops of onions. Sprinkle over top of tofu. Pour remaining soy sauce over green onions. Serve alone, with crackers or as a meal with noodles. SOY SISTERS' CHOCOLATE CHIP COOKIES

2 C brown sugar
2C sugar or maple sugar
2 tsp. vanilla
4 C flour
5 C oatmeal 2 tsp. baking powder
2 tsp. baking soda
24 oz. semi sweet chocolate chips or 20 oz. Malt sweetened chocolate morsels
8 oz. semi-sweet baking bar
In a medium bowl, cream together softened butter and sugars. Blend tofu in food processor until smooth. Add vanilla to tofu. Add tofu to the butter and sugar. Blend small amounts of oatmeal at a time in a food processor until it resembles a coarse flour. In a large bowl, mix together the oatmeal and the other dry ingredients. Mix tofu mixture into the dry ingredients. Coarsely chop the chocolate bar in a blender. Mix the chocolate chips and chopped bar into the cookie dough. Form dough into golf ball-sized cookies. Place 2 inches apart on an ungreased cookie sheet. Gently flatten dough around the edges. Recipe can be divided in half. Makes 112 cookies. For More Information, Contact:
